It is a cold and rainy day, so I looked in the fridge and found a package of loose chorizo and some kale and swiss chard that hadn’t sold at the bottom of the driveway on Saturday and rice. I usually have stock of some kind in the fridge (today was smoked pork bone and chicken stock).
So soup was on the menu today!
I rolled the sausage into little balls and baked at 350 for 20 minutes

I sautéed an onion in olive oil until translucent and added crushed garlic and chicken stock, brought the soup to a boil and added the meat balls and rice

I gave a rough chop to the kale and Swiss chard, after the soup boiled, I added the greens and some salt.

River said it was the essence of what soup should be, it was delicious.
I never make the same soup twice, I make similar soups, but not the same soup. I don’t measure, I just rough it. Most of the time they turn out well, some are better then others. This one was exceptionally tasty!
